One of my all time favorite recipes, is coconut rice. I have forever been crazy for coconut. My grandmother made a coconut cake I would fight someone for a piece of, and my favorite candy bar has always been Mounds Bars... Almond Joys will do in a pinch (not a fan of milk chocolate), but hands down if it's dark chocolate and coconut count me in! I swear this post has something to do with rice and not desserts..... although I feel like this might inspire me to attempt to make a coconut rice pudding? Maybe? I'll let you know if it turns out. Anyway back to coconut rice.
This is a super easy recipe and you will never look at rice the same. My fiance was a rice hater, until I force fed him this, and now he can't get enough of it, or me making it for him, or he has Stockholm Syndrome... who knows. Like I said, it's super easy and will go great with a lot of dishes.
1 can of coconut milk (not the low fat... don't be afraid, the fat makes this delicious)
1 cup of Jasmine Rice
1/2 teaspoon red pepper flakes (if you like spicy)
medium pot with a lid!
In a medium pot, add whole can of coconut milk (it's okay if you open it and it looks solid). DON'T RECYCLE THE CAN YET!! Using the coconut milk can, fill it halfway with water and add to the pot. Now you can recycle it... add red pepper flakes if you want. Use a whisk and mix until smooth. Heat until it is just about to boil... WARNING! KEEP AN EYE ON THIS, it will boil over fast when you're not looking! Once it is boiling add the rice and turn down the heat to low and cover. It should be done in about 15-20 minutes. It's done once all the liquid has been absorbed by the rice and the rice is tender. The rice will be creamier than regular rice.
